Ingredients
  • 4 cloves Garlic
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 1 medium Potato
  • 4 cup Vegetable broth
  • 2 cup Spinach
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add garlic and onion, and cook until softened.
  2. Add potato and vegetable broth. Bring to a boil, then reduce heat and simmer until potato is tender.
  3. Add spinach and cook until wilted.
  4. Use an immersion blender to puree the soup until smooth.
  5. Season with salt, black pepper, and lemon juice.
  6. Serve hot and enjoy!
