Ingredients
  • 4 cloves Garlic
  • 1 cup Quinoa
  • 1 cup Snap Peas
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Celery stalk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add garlic, onion, carrot, and celery. Cook until vegetables are softened, about 5 minutes.
  2. Add quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Add snap peas and cook for an additional 5 minutes.
  4. Season with salt and black pepper.
  5. Serve hot, garnished with fresh parsley.
