Ingredients
  • 6 cloves Garlic cloves
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 2 medium Potatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onion, and sauté until fragrant.
  2. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth. Season with salt and black pepper.
  4. Serve hot, garnished with fresh parsley.
