Ingredients
  • 1 cup Garlic scapes
  • 1 can Chickpeas
  • 2 tablespoon Tahini
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 4 tablespoon Water
Instructions
  1. Trim the ends of the garlic scapes and roughly chop them.
  2. In a blender or food processor, combine the garlic scapes, chickpeas, tahini, lemon juice, olive oil, salt, and water.
  3. Blend until smooth and creamy, adding more water if needed.
  4. Taste and adjust the seasoning as desired.
  5. Transfer the hummus to a serving bowl and drizzle with olive oil.
  6. Serve with pita bread or vegetables.
