Ingredients
  • 1 cup Lentils
  • 3 clove Garlic
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 Bay leaf
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add garlic, onion, carrots, and celery. Cook until vegetables are tender.
  4. Add lentils, vegetable broth, bay leaf, salt, black pepper, paprika, and cumin. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, or until lentils are cooked.
  6. Remove bay leaf and stir in fresh parsley and lemon juice.
  7. Serve hot and enjoy!
