Ingredients
  • 1 cup Garbanzo beans
  • 4 ounce Noodles
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and diced celery. Cook until vegetables are tender.
  2. Add cumin, paprika, salt, and black pepper. Stir well.
  3. Add garbanzo beans, vegetable broth, and noodles. Bring to a boil, then reduce heat and simmer for 15 minutes, or until noodles are cooked.
  4. Stir in lemon juice and fresh parsley.
  5. Remove from heat and let it rest for 5 minutes.
  6. Serve hot and enjoy!
