Ingredients
  • 1 cup Garbanzo beans
  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 1 juice of Lemon
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, garbanzo beans, cucumber, cherry tomatoes, red onion, parsley, and mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
