Ingredients
  • 5 pound Ripe tomatoes
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 cup Basil leaves
Instructions
  1. Blanch the tomatoes in boiling water for 1 minute. Transfer the tomatoes to an ice bath to cool. Peel the tomatoes and remove the seeds. Chop the tomatoes into small pieces. In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add the chopped tomatoes, salt, and sugar. Simmer for 45 minutes, stirring occasionally. Remove from heat and let it cool. Transfer the tomato mixture to freezer-safe containers. Label and freeze for up to 6 months. Thaw before using in soups and sauces.
