  • 1.5 cup Black beans
  • 3 tablespoon Coconut oil
  • 0.5 cup Maple syrup
  • 0.5 cup Cocoa powder
  • 2 tablespoon Flaxseed meal
  • 6 tablespoon Water
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Mint extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Dark chocolate chips
  • 0.5 cup Powdered sugar
  • for garnish Mint leaves
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a square baking dish.
  2. In a blender, combine black beans, coconut oil, maple syrup, cocoa powder, flaxseed meal, water, vanilla extract, mint extract, baking powder, and salt. Blend until smooth.
  3. Stir in dark chocolate chips.
  4. Pour the batter into the prepared baking dish.
  5. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the brownies cool in the dish for 10 minutes, then transfer to a wire rack to cool completely.
  7. In a small bowl, whisk together powdered sugar and mint extract.
  8. Drizzle the mint frosting over the cooled brownies.
  9. Garnish with mint leaves.
  10. Cut into squares and serve.
