Ingredients
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.75 cup Sugar
  • 1 tablespoon Lemon zest
  • 2 tablespoon Lemon juice
  • 0.75 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1.5 cup Powdered sugar
  • 2 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the coconut oil and sugar until light and fluffy.
  4. Add the lemon zest, lemon juice, almond milk, and vanilla extract to the creamed mixture. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spoon the batter into cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely.
  9. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  10. Once the cupcakes are cooled, frost them with the lemon glaze.
  11. Let the glaze set for about 10 minutes before serving. Enjoy!
