Ingredients
  • 500 gram Potatoes
  • 300 gram Tomatoes
  • 200 gram Bell Peppers
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 10 gram Fresh Basil
Instructions
  1. Peel and dice the potatoes into small cubes.
  2. Heat olive oil in a large frying pan over medium heat.
  3. Add the diced onion and minced garlic to the pan. Sauté until fragrant.
  4. Add the diced potatoes to the pan and cook until they start to soften.
  5. Slice the bell peppers and add them to the pan along with the diced tomatoes.
  6. Season with salt and black pepper. Stir well.
  7. Cover the pan and let the friggione simmer for about 20 minutes, or until the potatoes are cooked through.
  8. Remove from heat and let it rest for 5 minutes.
  9. Garnish with fresh basil leaves before serving.
