Ingredients
  • 1 cup Chickpea flour
  • 2 cup Water
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 4 piece Lemon wedges
Instructions
  1. In a saucepan, combine chickpea flour, water, olive oil, salt, and black pepper. Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
  2. Pour the mixture onto a greased baking sheet and spread it evenly. Let it cool and set for about 10 minutes.
  3. Cut the polenta into squares or rectangles.
  4. Heat olive oil in a frying pan over medium-high heat. Fry the polenta pieces until golden brown and crispy on both sides.
  5. Remove from the pan and drain on a paper towel.
  6. Serve hot, garnished with fresh parsley and lemon wedges.
