Ingredients
  • 500 gram Eggplant
  • 1 teaspoon Salt
  • 1 cup All-purpose flour
  • 2 unit Egg
  • 1 cup Breadcrumbs
  • 1 cup Vegetable oil
Instructions
  1. Slice the eggplant into 1/4-inch thick rounds.
  2. Sprinkle salt on both sides of the eggplant slices and let them sit for 10 minutes to remove excess moisture.
  3. Rinse the eggplant slices and pat them dry with paper towels.
  4. In a shallow dish, place the flour. In another shallow dish, beat the eggs.
  5. Dip each eggplant slice into the flour, then into the beaten eggs, and finally into the breadcrumbs, pressing gently to adhere.
  6. Heat vegetable oil in a large skillet over medium heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side.
  7. Remove the fried eggplant slices from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve the fried eggplant hot as an appetizer or side dish.
