Ingredients
  • 100 gram Fresh coriander leaves
  • 200 gram Potatoes
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a pot and sauté the onion and garlic until translucent.
  2. Add the potatoes and vegetable broth, and bring to a boil. Simmer until the potatoes are tender.
  3. Add the fresh coriander leaves and cook for another 5 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in lemon juice, salt, and black pepper.
  6. Let the soup rest for 5 minutes before serving.
  7. Garnish with additional fresh coriander leaves, if desired.
