Ingredients
  • 2 can Sweet Corn
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 2 tablespoon Fresh Cilantro
  • 1 teaspoon Red Chili Flakes
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. In a blender, puree the sweet corn.
  2. In a saucepan, heat the vegetable stock.
  3. Add the pureed sweet corn to the saucepan and simmer for 10 minutes.
  4. Stir in the coconut milk, lime juice, cilantro, red chili flakes, salt, and pepper.
  5. Remove from heat and let it cool.
  6. Transfer the soup to a container and refrigerate for at least 30 minutes.
  7. Serve chilled and garnish with fresh cilantro.
