Ingredients
  • 1 cup Quinoa
  • 2 cup Water
  • 1.5 cup Fresh cherries
  • 0.5 cup Pecans
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the water to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes.
  3. While the quinoa is cooking, pit and halve the cherries, chop the pecans, finely dice the red onion, and chop the parsley.
  4. In a large bowl, combine the cooked quinoa, cherries, pecans, red onion, parsley, lemon juice, olive oil, salt, and black pepper.
  5. Toss everything together until well combined.
  6. Let the salad rest for 5 minutes to allow the flavors to meld.
  7. Serve the Fresh Cherry and Pecan Quinoa salad chilled or at room temperature.
