Ingredients
  • 1 cup Barley
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook barley according to package instructions. Drain and let it cool.
  2. Chop cucumber, cherry tomatoes, red onion, and fresh parsley.
  3. In a large bowl, combine cooked barley, chopped vegetables, lemon juice, olive oil, salt, and black pepper. Mix well.
  4. Let the salad rest for 10 minutes to allow the flavors to blend.
