Ingredients
  • 2 cup White beans
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Soak the white beans overnight in water. Drain and rinse.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and diced celery. Cook until vegetables are tender.
  3. Add soaked white beans, bay leaves, thyme, salt, and black pepper to the pot. Pour in vegetable broth and bring to a boil.
  4. Reduce heat to low and simmer for about 1 hour or until the beans are soft.
  5. Remove bay leaves and use an immersion blender to blend the soup until smooth.
  6. Serve hot, garnished with fresh parsley.
