Ingredients
  • 1 cup French lentils
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 leaf Bay leaves
  • 2 sprig Thyme sprigs
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, minced garlic, sliced carrots, and chopped celery. Cook until vegetables are tender.
  4. Stir in tomato paste, lentils, bay leaves, thyme, salt, and black pepper.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover the pot, and simmer for about 30 minutes or until lentils are tender.
  7. Remove bay leaves and thyme sprigs.
  8. Serve hot, garnished with fresh parsley.
