Ingredients
  • 1 cup French lentils
  • 4 cups Vegetable broth
  • 2 medium Carrots
  • 2 stalks Celery stalks
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 1 leaf Bay leaf
  • 1 teaspoon Thyme
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 4 wedges Lemon wedges
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, carrots, celery, and garlic. Sauté for 5 minutes.
  4. Add the lentils, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 25 minutes, or until the lentils are tender.
  6. Remove the bay leaf and thyme sprigs.
  7. Serve hot, garnished with fresh parsley and lemon wedges.
