Ingredients
  • 1 cup Dried fava beans
  • 3 clove Garlic cloves, minced
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 2 tablespoon Tahini
  • 4 tablespoon Fresh parsley, chopped
  • 1 cup Tomatoes, diced
  • 1 cup Cucumber, diced
  • 1 cup Red onion, diced
  • 1/4 cup Black olives, pitted and sliced
Instructions
  1. Soak the dried fava beans overnight in water.
  2. Drain the soaked beans and rinse them.
  3. In a large pot, add the fava beans and cover with water. Bring to a boil and simmer for about 45 minutes or until the beans are tender.
  4. Drain the cooked beans and let them cool.
  5. In a bowl, mix together minced garlic, lemon juice, olive oil, salt, cumin, and tahini.
  6. Add the cooked fava beans, diced tomatoes, diced cucumber, diced red onion, and sliced black olives to the bowl. Mix well.
  7. Let the salad rest for 30 minutes to allow the flavors to blend.
  8. Sprinkle fresh chopped parsley on top before serving.
  9. Serve the Fool Medammes Fava Bean Salad as a refreshing and nutritious salad.
