Ingredients
  • 1.5 cup Cornmeal
  • 1 cup Gluten-free flour blend
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Sugar
  • 1.25 cup Unsweetened almond milk
  • 1 tablespoon Apple cider vinegar
  • 3 tablespoon Vegetable oil
  • 1 tablespoon Ground flaxseed
  • 3 tablespoon Water
Instructions
  1. Preheat the oven to 400°F (200°C) and grease a 9-inch square baking pan.
  2. In a large bowl, whisk together the cornmeal, gluten-free flour blend, baking powder, salt, and sugar.
  3. In a separate bowl, combine the almond milk and apple cider vinegar. Let it sit for a few minutes to curdle.
  4. In a small bowl, mix together the ground flaxseed and water. Let it sit for 5 minutes to thicken.
  5. Add the almond milk mixture, flaxseed mixture, and vegetable oil to the dry ingredients. Stir until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  9. Serve warm or at room temperature.
