Fiona’s Lentil Soup

Rinse the lentils under cold water.

In a large pot, heat some oil over medium heat and sauté the onion, carrots, celery, and garlic until they start to soften.

Add the lentils, vegetable broth, water, cumin, paprika, turmeric, salt, and black pepper to the pot.

Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes or until the lentils are cooked through.

Use an immersion blender or a regular blender to blend the soup until smooth.

Stir in the lemon juice and fresh cilantro.

Let the soup rest for 10 minutes before serving.
