Ingredients
  • 500 gram Carrots
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 2 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. Peel and chop the carrots, onion, garlic, and ginger.
  2. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the carrots and curry powder to the pot and cook for a few minutes.
  4. Pour in the vegetable broth and coconut milk, then bring to a boil.
  5. Reduce the heat and let the soup simmer for about 20 minutes, or until the carrots are tender.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Stir in the lime juice, salt, and black pepper.
  8. Serve the soup hot, garnished with fresh cilantro.
