Ingredients
  • 2 cup Broccoli
  • 4 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Coconut milk
Instructions
  1. Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant.
  2. Add broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in coconut milk and season with salt and black pepper.
  5. Simmer for an additional 5 minutes.
  6. Serve hot and enjoy!
