Ingredients
  • 1 cup Fava beans
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Milk
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. In a blender, blend the fava beans until smooth.
  2. In a mixing bowl, combine the blended fava beans, flour, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, milk, and olive oil.
  4. Gradually pour the egg mixture into the fava bean mixture, stirring until well combined.
  5. Heat a non-stick skillet over medium heat and lightly grease with olive oil.
  6. Pour 1/4 cup of the batter onto the skillet for each pancake.
  7. Cook for 2-3 minutes on each side, or until golden brown.
  8. Remove from the skillet and repeat with the remaining batter.
  9. Serve the fava bean pancakes hot, garnished with fresh parsley.
