  • 1 cup Fava beans
  • 0.5 cup Pumpkin seeds
  • 2 clove Garlic cloves
  • 0.5 cup Fresh basil leaves
  • 2 tablespoon Lemon juice
  • 0.25 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Blanch the fava beans and remove their outer skins.
  2. In a blender or food processor, combine the fava beans, pumpkin seeds, garlic cloves, basil leaves, lemon juice, olive oil, salt, and black pepper.
  3. Blend until smooth, adding more olive oil if needed.
  4. Taste and adjust seasoning as desired.
  5. Serve the pesto with pasta, bread, or as a dip.
