Ingredients
  • 8 ounce Rice noodles
  • 4 cup Vegetable broth
  • 3 teaspoon Soy sauce
  • 1 teaspoon Ginger
  • 2 clove Garlic
  • 1 medium Onion
  • 1 cup Mushrooms
  • 1 cup Carrots
  • 1 cup Bean sprouts
  • 4 wedge Lime
  • 4 tablespoon Fresh cilantro
  • 4 tablespoon Fresh basil
  • 2 teaspoon Sriracha sauce
Instructions
  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable broth over medium heat.
  3. Add soy sauce, ginger, garlic, and onion to the pot. Simmer for 10 minutes.
  4. Add mushrooms and carrots to the pot. Cook for an additional 5 minutes.
  5. Divide the cooked rice noodles among four bowls.
  6. Ladle the hot broth and vegetables over the noodles.
  7. Top with bean sprouts, lime wedges, fresh cilantro, and basil.
  8. Serve with sriracha sauce on the side.
