Ingredients
  • 300 gram Potatoes
  • 200 gram Carrots
  • 1 piece Onion
  • 2 clove Garlic
  • 2 stalk Celery
  • 2 piece Tomatoes
  • 150 gram Green beans
  • 150 gram Cabbage
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh herbs (parsley, thyme, etc.)
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until fragrant.
  3. Add diced potatoes, carrots, celery, and green beans to the pot. Stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer for 20 minutes or until the vegetables are tender.
  6. Add chopped tomatoes and cabbage to the pot. Cook for an additional 5 minutes.
  7. Season with salt, black pepper, and fresh herbs. Stir to combine.
  8. Remove from heat and let the soup rest for 5 minutes.
  9. Serve hot and enjoy!
