Ingredients
  • 1.5 cup Zucchini
  • 1 cup Carrot
  • 0.5 cup Cranberries
  • 1.5 cup Oats
  • 0.5 cup Almond flour
  • 2 tablespoon Coconut oil
  • 3 tablespoon Maple syrup
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and carrot, then squeeze out any excess moisture.
  3. In a large bowl, combine the grated zucchini, carrot, oats, almond flour, cranberries, coconut oil, maple syrup, cinnamon, vanilla extract, and salt. Mix well.
  4. Press the mixture into a greased baking dish.
  5. Bake for 30 minutes or until golden brown.
  6. Remove from the oven and let it cool for 1 hour.
  7. Cut into bars and serve.
