Ingredients
  • 1 head Escarole
  • 1 can Cannellini beans
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  2. Add escarole and cook until wilted.
  3. Add cannellini beans, vegetable broth, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot and enjoy!
