  • 2 piece English Muffins
  • 1 piece Ripe Avocado
  • 2 slice Tomato
  • 4 slice Red Onion
  • 1 teaspoon Lemon Juice
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 handful Baby Spinach
  • 1 teaspoon Olive Oil
Instructions
  1. Slice the English muffins in half and toast them.
  2. Mash the ripe avocado in a bowl and add lemon juice, salt, and black pepper to taste.
  3. Spread the avocado mixture on one side of each toasted English muffin half.
  4. Layer tomato slices, red onion slices, and baby spinach on top of the avocado mixture.
  5. Drizzle olive oil over the vegetables.
  6. Top with the other half of the English muffins.
