  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 cup Water
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are tender.
  3. Add tomato paste, thyme, bay leaves, salt, and black pepper. Stir well.
  4. Add lentils, vegetable broth, and water. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until lentils are tender.
  5. Remove bay leaves and serve hot.
