Ingredients
  • 500 gram Eggplant
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Tomatoes
  • 1 medium Bell pepper
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplant into cubes and sprinkle with salt. Let it sit for 10 minutes to remove excess moisture.
  3. Rinse the eggplant cubes and pat them dry.
  4. In a large pan, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  5. Add the eggplant cubes, tomatoes, bell pepper, cumin, paprika, salt, and black pepper. Cook for 10 minutes, stirring occasionally.
  6. Transfer the mixture to a baking dish and bake in the preheated oven for 20 minutes.
  7. Remove from the oven and sprinkle with fresh parsley and lemon juice.
  8. Let it rest for 10 minutes before serving.
