Ingredients
  • 400 gram Eggplant
  • 2 teaspoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 slice Tomato
  • 4 leaf Lettuce
  • 4 slice Red onion
  • 8 slice Bread
Instructions
  1. Preheat the grill.
  2. Slice the eggplant into 1/2-inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and sprinkle with salt and black pepper.
  4. Grill the eggplant slices for about 3-4 minutes per side, until tender and lightly charred.
  5. Toast the bread slices.
  6. Assemble the sandwiches by layering grilled eggplant, tomato slices, lettuce, and red onion on the bread slices.
  7. Serve immediately and enjoy!
