Ingredients
  • 500 gram Eggplant
  • 2 teaspoon Olive Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 1 cup Tomato Sauce
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Parmesan Cheese
  • 10 gram Fresh Basil Leaves
Instructions
  1. Cut the eggplant into small cubes.
  2. Heat olive oil in a pan and sauté the onion and garlic until translucent.
  3. Add the eggplant cubes and cook until they are soft and golden brown.
  4. Stir in the tomato sauce, dried basil, dried oregano, salt, and black pepper.
  5. Simmer the sauce for 15-20 minutes.
  6. Serve the sauce over cooked pasta.
  7. Garnish with grated Parmesan cheese and fresh basil leaves.
