Ingredients
  • 1 medium Eggplant
  • 2 tablespoon Olive oil
  • 8 slices Bread
  • 4 slices Mozzarella cheese
  • 4 slices Tomato
  • 8 leaves Basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the grill.
  2. Slice the eggplant into 1/4-inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.
  4. Grill the eggplant slices for 3-4 minutes on each side, until tender and lightly charred.
  5. Remove the eggplant slices from the grill and let them rest for 5 minutes.
  6. Meanwhile, toast the bread slices until golden brown.
  7. Place a slice of mozzarella cheese on 4 bread slices.
  8. Top each with grilled eggplant, tomato slices, and basil leaves.
  9. Season with salt and black pepper.
  10. Cover with the remaining bread slices.
  11. Grill the paninis for 2-3 minutes on each side, until the cheese is melted and the bread is crispy.
  12. Remove from the grill and let them rest for a few minutes before serving.
  13. Slice the paninis in half and serve warm.
