Ingredients
  • 500 gram Eggplant
  • 4 teaspoon Tahini
  • 2 clove Garlic
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the eggplant in half lengthwise and place it on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 25 minutes or until the flesh is soft and golden.
  2. Scoop out the flesh of the roasted eggplant and transfer it to a food processor.
  3. Add tahini, garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper to the food processor. Blend until smooth and creamy.
  4. Transfer the eggplant hummus to a serving bowl, drizzle with olive oil, and sprinkle with fresh parsley.
  5. Serve with pita bread, crackers, or vegetable sticks.
