Ingredients
  • 500 gram Eggplant
  • 1 medium Onion
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 2 medium Tomato
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • 2 tablespoon Oil
  • 2 tablespoon Fresh Coriander
Instructions
  1. Heat oil in a pan and fry the eggplant until golden brown. Set aside.
  2. In the same pan, sauté the onion, garlic, and ginger until fragrant.
  3. Add the tomatoes and cook until they soften.
  4. Stir in the curry powder, turmeric powder, cumin powder, and coriander powder.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the fried eggplant and salt. Cook for another 10 minutes.
  7. Garnish with fresh coriander and serve hot with rice or naan bread.
