Ingredients
  • 500 gram Eggplant
  • 1 piece Onion
  • 3 clove Garlic
  • 1 inch Ginger
  • 2 piece Tomato
  • 2 piece Green chili
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Salt
  • 2 tablespoon Oil
  • 2 tablespoon Fresh coriander leaves
Instructions
  1. Cut the eggplant into small cubes.
  2. Heat oil in a pan and fry the eggplant until golden brown.
  3. Remove the fried eggplant from the pan and set aside.
  4. In the same pan, add more oil and sauté the chopped onion, garlic, and ginger until golden brown.
  5. Add the chopped tomatoes and green chili. Cook until the tomatoes are soft.
  6. Add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala powder, and salt. Mix well.
  7. Add the fried eggplant to the pan and mix everything together.
  8. Cover and simmer for 10-15 minutes.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with rice or roti.
