Ingredients
  • 2 medium Eggplant
  • 1 cup Greek Yogurt
  • 2 tablespoon Lemon Juice
  • 2 clove Garlic
  • 2 tablespoon Olive Oil
  • 1 medium Red Onion
  • 2 medium Tomato
  • 1 medium Cucumber
  • 2 tablespoon Fresh Dill
  • 4 piece Pita Bread
Instructions
  1. Preheat the grill or grill pan.
  2. Slice the eggplant into 1/4-inch thick rounds.
  3. In a small bowl, mix together Greek yogurt, lemon juice, minced garlic, and salt.
  4. Brush both sides of the eggplant slices with olive oil.
  5. Grill the eggplant slices for about 3-4 minutes per side, until tender and lightly charred.
  6. While the eggplant is grilling, prepare the toppings by slicing the red onion, tomato, and cucumber.
  7. Warm the pita bread on the grill for a minute on each side.
  8. Spread a generous amount of the yogurt sauce on each pita bread.
  9. Top with grilled eggplant slices, red onion, tomato, cucumber, and fresh dill.
  10. Fold the pita bread in half and serve immediately.
