  • 1 cup Okara
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Cinnamon
  • 1 cup Peaches
  • 0.5 cup Plain yogurt
  • 0.25 cup Maple syrup
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, combine the okara, flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, mash the peaches with a fork.
  4. Add the mashed peaches, yogurt, maple syrup, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cake cool in the pan for 10 minutes.
  8. Transfer the cake to a wire rack and let it cool completely.
  9. Serve and enjoy!
