Ingredients
  • 2 cup Edamame
  • 1 cup Corn Kernels
  • 1 cup Bell Pepper
  • 1 cup Cherry Tomatoes
  • 1/4 cup Red Onion
  • 1/4 cup Fresh Basil
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Bring a pot of water to boil and blanch the edamame for 3 minutes. Drain and rinse with cold water.
  2. In a large bowl, combine the blanched edamame, corn kernels, diced bell pepper, halved cherry tomatoes, thinly sliced red onion, and chopped fresh basil.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad ingredients and toss to combine.
  5. Let the salad sit for a few minutes to allow the flavors to meld. Serve chilled.
