  • 2 cup Edamame
  • 1 cup Corn kernels
  • 1 cup Red bell pepper
  • 1/4 cup Red onion
  • 1/2 cup Cherry tomatoes
  • 1/4 cup Fresh basil leaves
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. In a large skillet, heat olive oil over medium heat. Add red onion and red bell pepper, sauté until softened.
  2. Add corn kernels and cherry tomatoes, cook for 3-4 minutes.
  3. Stir in edamame, basil leaves, lemon juice, salt, and black pepper. Cook for another 2-3 minutes.
  4. Remove from heat and let it rest for 5 minutes.
  5. Serve warm and enjoy!
