  • 2 cup Edamame
  • 1 cup Corn kernels
  • 1 cup Red bell pepper
  • 1/2 cup Red onion
  • 1/2 cup Cherry tomatoes
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Heat olive oil in a pan over medium heat. Add red onion and sauté until translucent.
  2. Add corn kernels, red bell pepper, and cherry tomatoes. Cook for 3-4 minutes.
  3. Stir in edamame, lime juice, salt, and black pepper. Cook for another 2 minutes.
  4. Remove from heat and garnish with fresh cilantro.
  5. Serve hot as a side dish or as a light lunch.
