Ingredients
  • 2 avocado Ripe Avocado
  • 1 cup Edamame
  • 2 tablespoon Lime Juice
  • 1 small Red Onion
  • 2 tablespoon Cilantro
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 medium Tomato
  • 1 small Jalapeno
Instructions
  1. In a medium bowl, mash the ripe avocados with a fork.
  2. In a separate pot, cook the edamame according to package instructions.
  3. Once cooked, drain the edamame and let it cool.
  4. In a food processor, blend the cooked edamame, lime juice, red onion, cilantro, garlic, salt, and black pepper until smooth.
  5. Add the edamame mixture to the mashed avocados and mix well.
  6. Dice the tomato and jalapeno, and fold them into the guacamole.
  7. Serve the edamame guacamole with tortilla chips or vegetable sticks.
