Ingredients
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalks Celery
  • 1 medium Potato
  • 2 clove Garlic
  • 4 cups Vegetable broth
  • 1 cups Canned diced tomatoes
  • 1 cup Frozen peas
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
Instructions
  1. Heat oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  2. Add the potato, vegetable broth, diced tomatoes, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in the frozen peas and cook for an additional 5 minutes.
  4. Remove from heat and let the soup rest for 5 minutes.
  5. Serve hot, garnished with fresh parsley.
