Ingredients
  • 500 gram Tomatoes
  • 300 gram Beets
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Fresh basil leaves
  • 4 tablespoon Sour cream
Instructions
  1. Peel and chop the tomatoes, beets, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
  3. Add the chopped tomatoes and beets to the pot, along with the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until the vegetables are tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth.
  5. Serve hot, garnished with fresh basil leaves and a dollop of sour cream.
