Ingredients
  • 16 ounce Tofu
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Bell Pepper
  • 1 can Canned Diced Tomatoes
  • 1 can Kidney Beans
  • 1 cup Corn
  • 2 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Cilantro
Instructions
  1. Press tofu to remove excess water. Cut into cubes.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, garlic, and bell pepper. Sauté until softened.
  4. Add tofu, chili powder, cumin, paprika, salt, and black pepper. Cook for 5 minutes.
  5. Add canned diced tomatoes, kidney beans, and corn. Stir well.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Remove from heat and let rest for 10 minutes.
  8. Serve hot, garnished with cilantro.
