Ingredients
  • 500 gram Pumpkin
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoon Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent. Add diced pumpkin and cook for 5 minutes, stirring occasionally. Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes, or until pumpkin is tender. Use an immersion blender or transfer the soup to a blender to puree until smooth. Return the soup to the pot and stir in coconut milk. Season with salt, black pepper, and paprika. Simmer for another 5 minutes, stirring occasionally. Serve hot, garnished with chopped parsley.
